- My family took Fruitcake very seriously. My mom made both light and dark fruitcakes every year for as long as I can remember and shipped them out to family and friends all over the country. My dad was in charge of all the shipping. So many incredible memories. Today, I know that my mom and dad were watching from up above and approving because the cakes in this video turned out absolutely perfectly. Thanks mom and dad it was a wonderful feeling honoring you guys today.
Christian Brother's Brandy...Lowell, "We need MORE!" my mom would say. It is the only liquid in these fruitcakes, and she made a lot of them.
Cake batter for Fruitcake
1 cup cutter
2 cups sugar
1 7 3/4 cups flour
1 tsp baking powder 1 cup brandy ( you can use milk instead)
Fruit and Nuts:
1 pound walnuts
1 pound pus 1/4 pound candied cherries
In video I said cups, it is pounds.
1/2 pound golden raisins
1/2 pound candied pineapple
1/4 cup flour to toss into the fruit and nuts
