  • My family took Fruitcake very seriously. My mom made both light and dark fruitcakes every year for as long as I can remember and shipped them out to family and friends all over the country. My dad was in charge of all the shipping. So many incredible memories. Today, I know that my mom and dad were watching from up above and approving because the cakes in this video turned out absolutely perfectly. Thanks mom and dad it was a wonderful feeling honoring you guys today.
    Christian Brother's Brandy...Lowell, "We need MORE!" my mom would say. It is the only liquid in these fruitcakes, and she made a lot of them.
    Ingredients:
    Cake batter for Fruitcake
    6 eggs
    1 cup cutter
    2 cups sugar
    1 7 3/4 cups flour
    1 tsp baking powder 1 cup brandy ( you can use milk instead)
    Fruit and Nuts:
    1 pound walnuts
    1 pound pus 1/4 pound candied cherries
    In video I said cups, it is pounds.
    1/2 pound golden raisins
    1/2 pound candied pineapple
    1/4 cup flour to toss into the fruit and nuts

    You have to be a certain age to remember using a brown paper bag as a pan liner. I remember my mom doing it.

    Hi Margie. What a beautiful story behind these fruitcakes. These turned out wonderful. They look so delicious! I really appreciate you sharing the recipe. I am positive your Parents were there in the kitchen guiding your hands. What a wonderful gift to send at Christmas time. It seems people today don't bake or want to bake anymore or carry on traditions. That's why I love remembering the Holiday's from my childhood and from the years of the late 60's to the 70's.       You are so sweet as usual. I was a disaster in the kitchen. My mom used to get so upset with me and say she never saw someone make a bigger mess. I do not like to clean till I am done. It seems most clean as they go. Just for the record right now kitchen is really clean!! I even cleaned out my refrigerator today. Ha Ha. So have a great day tomorrow and talk to you soon. Margie
