    This is how the French make their scrambled eggs. If all you've ever had is American scrambled eggs and that's what you like, it's fine. You dont have to make it this way. Although it's by far the most delicious scrambled egg in my opinion

    I tried eggs this style in a hotel breakfast in Italy once. They’re actually soo good.
    Now diner style eggs taste like rubbery and tasteless.
    I grew up eating tamago kake gohan (egg mixed with rice) so I don’t have a problem with “undercooked” eggs.

      Also in asia, pan heat up faster, egg overcook easier because room temperature here is very hot. You install air conditioner here while in Europe you install heater.

      Well he not try to make it rocket science. In my opinion he try to make it easier. If you do scrambled egg normal way, you need to have good heat control so your eggs not over cook. By scrambling the egg in cold pan, you dont need heat control because it will cook real slowly. It is easier to do for beginers. Its my opinion. Although he do it dramatically with some serious music; thats what makes it looks like rocket science, maybe.

    I tried this recipe a few times and it's okay. A little greasy from the butter and without much texture, kind of mushy. The eggs do continue to set out of the pan, but not as much as I think some are making it seem. I'll go back to the Japanese style which results in fluffy and tender eggs yet retain a bite, and the creamy part isn't greasy.

      put yogurt bacteria in regular cream and let it ferment for a couple of days and you just made creme fraisch.
