I've always been of the belief that you need two cheeses. Both a good melter (ex. processed american) and a flavorful stretcher (ex. cheddar). I find that yields the best combination of flavor vs texture.

Sourdough is always my favorite, but I like to mix cheese. Muenster is incredibly underappreciated.

Muenster cheese is the BEST for grilled cheese. I'll usually mix it with either an extra sharp cheddar, "real" American, or Colby/pepper jack. Lately the jack cheeses with the Muenster has been a hit.
Y'all forgot the best cheese to use: Muenster. It melts super well, and the taste compliments any bread or butter used.

The best cheese for grilled cheese is definitely casu martzu.

@Allco Psarebastards Sharp cheddar is delicious in Grilled Cheese, but it doesn't melt well. If you shred it (no preshredded, shred it yourself) it melts before the bread burns, but there is limited/no stretch unless you mix in another cheese. The taste profile, though, 10/10, it's always in my cheese blend.
Honestly this just saved me time cause I won’t need to butter the bread and toast both sides - making a quick dinner for the kids quicker. You guys are heros in my book.
Dry toast one side first then put the cheese on that side. I tried that after the Gordon Ramsay video; cheese does melt better without the greasiness of butter on both sides
Wait, Gordon wasn't criticizing "double toasted bread" he was criticizing Josh's fun way of talking lol. Cuz Josh said "put the bread on the pan bread side down" and Gordon was just processing it and his wording ended up being weird... Still a weird thing to criticize though.

It’s absolutely fantastic in grilled cheese. Super fluffy and gets nice and crispy. I recommend that anyone who sees this comment gives it a try
White bread or milk bread from a bakery is the best. I can't imagine sourdough not adding an unpleasant flavor.

I've found muenster cheese to be the best for a grilled cheese. It melts well and tastes really good.
There’s no such thing as “too cheesy”…. You should be able to feel the cheese flowing through your veins!
Gouda is the best cheese for a grilled cheese! It melts great, tastes great and is low in lactose for those who are lactose intolerant. I also add a lid before the flip so that the cheese melts better, don't add a lid after cause then you'll influence the crust on the side that's already toasted.
I do the lid thing too because I like to use lotttts of cheese

I like making them the way my mom taught me: mayo on each of the inner sides, kraft cheese, plenty of butter in pan (mostly because it's easier to do). Definitely gonna try the grocery store sourdough suggestion.
Same. This is the way my dad has me make them for him. Mayo on the inside, butter on the out or in the pan (depending on the pan size to make it easier) and kraft singles.
Cream cheese on the inside under the Cheddar/Mozzarella.

Just dropping by to put my vote to make the opposite recipe at the end of the show to contrast to the winning combo just to see how much better it is. Or possibly make a frankenstein's monster of success despite the contrary opinion.
White bread with Mayo and cheddar is DEFINITELY better than what they did. Hands down.

I got really into grilled cheeses in college because I got one on a whim from our cafe and the ones this one cafeteria lady made were like *impossibly* perfect and I've been trying to recreate them ever since. Also she'd always insist on giving me a pickle on the side, but the ones my school had were nasty so I'd just put it on top and she was right, pickle juice makes it.
The closest I've gotten to recreating it is with brownberry breads natural wheat (red with wavey wheat text), one slice kraft single, brushing it with melted butter, and then putting a pickle slice on top.
Also sour dough with horseradish mustard and swiss cheese is my second favorite.
As a proud San Luis Obispo native, I'm happy our local bread got representation! I'm a huge advocate for San Luis Sourdough in grilled cheese, using mayonnaise to crisp it up!
Hell yeah! Paso here, kind of wish people would stop moving here, but glad to see our regional yeasts get some recognition!
@BlissfulBunny Yeah...I disagreed with them on that part. Maybe it's because I just like mayonnaise, but I've also found the mayonnaise creates a more delicate crisp, while the butter makes it more crunchy. I do a cheese blend of cheddar, Jack, and mozzarella on San Luis sourdough spread with mayonnaise, and then cooked with a panini press.
But they found out butter makes it more crispy
Possible hot take: Sure pan butter is great, but I've started doing pan butter AND mayo, and it's brilliant!

@rnd I definitely eat mine with lots of pickles on the side. Always have, always will. Famous Daves Devil Spit pickles on the sandwhich AFTER making it is just so good!

Not just you. I never did the juice (why did I not think of the juice?) but I always want/have loads and loads of pickles on the side.
They can't be on it because unless they're deep fried, hot pickles are not where it's at.
My favorite grilled cheese is honestly with mozzarella, especially to eat with tomato soup 👌

While I often had grilled cheese with the processed cheese food product, either Kraft or government cheese, as a child, I find grilled cheese made with real cheese far superior in both flavor and texture.

You don't need to toast the insides, unless you are using real cheese. And even then, you just warm it up to start the melting.
I’m a big fan of using mayo to make my grilled cheese sammies. It’s easier to spread than butter and I dig the flavor it gives.
We use a mix of may and butter. Spreads so much easier than butter, but has a better flavor than mayo. It also seems to melt or separate more for better coverage.
Anyone thinking of looking into this themselves, I have a suggestion from personal experience: melt the butter and mayo in a 50/50 ratio and mix well. Brush it onto the bread, you will not be disappointed.
My roommate also toasts the inside, adds toppings, and toasts the outside. His cooking is the reason I moved in with him, so that's an endorsement.

Ive grown up eating extra sharp cheddar cheese grilled cheese sandwiches so for me anything else just tastes wrong lol, I think the nostalgia factor is really important in a grilled cheese

I worked at five guys for years and the grilled cheeses were toasted in Mayo and they were amazing.

I've always toasted both sides to, but I only use butter for toasting the outside. Try going dry when you toast the middle sides

@Heather Marriette oh man, you haven't had muffaleta? You HAVE to try it. I'm not even a sandwich person, but a muffaleta is one of my all time favorites. Holy crap, so good. I do think you need the cheese to balance the acidity, though, ie, it's not as good as a salad by itself but as a spread (which is its original use, I believe, but with provolone or some other cheese).
Next time you make a crock pot roast, add some of the juice onto the top for an extra kick. So yummy.

I love that Josh dips his grilled cheese in ketchup. I've done that since childhood too and people always give me crap about it. SOLIDARITY!
My winning formula mostly matches theirs. One minor addition to this, is that I always use a covered frying pan for grilled cheese to make sure it's extra melty. It's a toss up between American or Kraft singles, but the real comparison is with Kraft deli-selects, which totally win in my book. Super fun episode!

I like to use a mix of smoked gouda and sharp cheddar on sour dough for my grilled cheese. It's incredible.
My fiance makes garlic buttered grilled cheese. I'm a huge fan of mozzarella grilled cheese as well, dipping in garlic aioli is also a go to

Toasting both sides is good if you’re using multiple cheeses, especially one with a higher melting point like parmesan
I used to toast both sides of the bread, until my friend made me a grilled cheese with only toasting one side of the bread, and it was SOOOOOO much better, to me.
My favorite way to make a grilled cheese is with Texas toast; the thickest you can find. Then with sliced cheddar cheese and then shredded cheddar as well. You sandwich the shredded in between two pieces of sliced… and with the shredded you get that little processed taste without having nasty Kraft cheese lol
I love the Sourdough from Costco, but it's hard to get even slices to make a great one :')

@h1r086 uhh, pain in French is not like pay or puh at all. Pan is the closest in American English but with a nasal "h" instead of the n. Like, you say thethe start of the n but are not finishing it. Sorry, just couldn't keep myself from correcting that. :) French nerd here.
@Podderich I believe that is because they did not have European style bread until the Spanish missionaries brought it over. They had rice and rice based baked goods only.

I literally made grill cheese while watching this. Butter bread, sourdough, kraft & grated mozzarella, a lil extra butter on pan and drop sandwich right on the dollop of butter. Medium high on a cast iron skillet. Perfect and the cheese will stretch.
Peppercini juice all the time! Love it! Try it on/ with tuna salad too!

I'm thinking we need a good steak test. Talking of course at minimum which level to cook steak to (medium rare),sauce or no sauce (no sauce) and maybe which seasoning or cut of steak is best.
I've done ketchup on grilled cheese, it's so good. My brother in law does grape jelly on his grilled cheese.
Very Important: You can get Kraft Deluxe American cheese which is real American cheese, not cheese product. You can even get Kraft Deluxe White American cheese.
When I make Grilled Cheese I make at home is Mayo, sourdough, or rye bread, with one slice of cheddar and one slice of swiss cheese. So good!
Mayo is literally so good, like it's a step up from butter, it adds more flavor
Personal fave:
- potato bread
- butter in the pan
- whole grain mustard inside side
- gruyere
- brie
- sliced pear
- honey
- prosciutto
- more gruyere
Cheese flavor is complex, nutty and funky. Prosciutto adds some saltiness, the honey and pear adds sweetness and the mustard adds a bit of heat.
Since I was a kid I'd been buttering my bread when making grilled cheese. I tried pan buttering and it's SO much better.
Love a classic grilled cheese, but sharp cheddar grilled cheese hits so hard! Trust me!
After watching this video, I made one on the toast setting on my air fryer, with brioche bread, butter on bread, and Kraft Velvetta cheese singles
It's funny how Gordan gives criticism about grilled cheese sandwiches when he failed to even melt the cheese in his own version which is what makes the grilled cheese sandwich what we know and love about them.
@Sin Queen No it wasn't. That was Gordon trying to make a showoff over the top bourgeoisie grilled cheese for Michelin star chefs, and it was awful. It's not like it's the first time he's failed miserably at cooking either. He's on video multiple times screwing up basic recipes. It's just proof that celebrity and money don't equal talent. He got where he is by bullying other people and being over the top. I can't name two "signature dishes" he's ever made, but I can name a dozen times he's had a meltdown. Celebrity chefs can't cook.
@Sin Queen I'm pretty sure the network would have let him take a second take on the video when the first one failed. He burned the bread and failed to melt the cheese. Yeah I'm pretty sure a star like Gordan Ramsey could have had a second chance if he wanted...he just didn't want it.
To be fair to him though, that but was network controlled. Not Gordon controlled, so you can’t really blame him for doing what he was told to do

As a San Luis native, the way “Luis” was pronounced in the beginning was accurate with out-of-towners. Also accurate that SLO sourdough is the best. Those guys literally threw packages of bread at me at the end of the farmers market because they didn’t want to bring it all home. I can easily make a bread winner joke, but I really did win, that bread is beautiful.
We used to come back from every trip to visit my grandparents with so many loaves for the freezer. So good.

The key is to put the mayo on the inside of the bread, so you get the tang added to the cheese, makes it a little creamier, and you still get the butter in the outside of the bread.
I can't believe they didn't do a single round where the inside of the bread was spread.

I've used sandwich spread, which is similar to Big Mac sauce instead of butter or Mayo. It's good, it's a little sticky but the flavors there. Also I like a thick brioche 👍🏾
I've made grilled cheese with garlic seasoning on the outside to make garlic bread grilled cheese. It's pretty good. Just don't expect a classic grilled cheese taste.

I always go Extra Sharp Cheddar. that extra pungency in the extra sharp really goes well with the bread.
The absolute best condiment for a grilled cheese sandwich is French onion dip! Specifically Heluva Good brand. I started it at a very young age when I’d have a side of chips and dip with the sandwich and I will never turn back.
Another thing I have recently been doing is doing the normal butter outside, but spreading Mayo on the inside. Gives it more flavor and isn’t as dry

The real secret to an amazing grilled cheese is grilling the inside of the bread, not the outside. Toasty crunch inside, fluffy soft on the outside so you don't shred the roof of your mouth on sandpaper toast. You're welcome.
Sourdough is abundant in CA and it is something I miss so much having moved away. I love love love THAT exact bread! My mom has packed a loaf of it in her suitcase to bring to me ❤️
I watched this and went and made a grilled cheese on wheat bread. I grew up with parents pretty similar to what Vi and Josh both described, but idk. I still love a grilled cheese with wheat bread. Nostalgia I guess.
My mom actually taught me to use mayo a year ago when I asked her how the gets the bread so toasty and crispy, and I've been doing it since. It honestly doesn't seem like it should be as good as it actually is

my 69 year old mom uses the same method
Never done this but surely the thing would be to toast the bread, microwave the cheese by itself and then apply melted cheese to the toast.
I do regularly microwave sandwiches but only for twenty seconds because it turns out that just heating cheese makes it tasty, it doesn’t actually need to melt
I just butter or margerine and microwave for 10 seconds, if you put a little bit of oregano it tastes amazing

Yup. Tomato bisque. I used to do tomato soup, but it is bland and watery after having the bisque. I'll never go back.
