Binging with Babish: Pasta Aglio e Olio from "Chef"

  • What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama "Chef". Recipe below!
    RECIPE
    *Ingredients*
    1/2 head garlic, separated and peeled
    1 bunch parsley, rinsed
    1/2 cup good quality olive oil
    1 tsp red pepper flakes
    1/2 lb dry linguine
    1/2 lemon
    *Method*
    Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.
    Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.
    Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

    So I have a story with making this that isn't a "I didn't like it, but I left out an ingredient" situation. All the ingredients were in place, but there was a toddler in the mix.
    I'd made it for my cousin and her husband since they're vegetarian, and I knew it was perfect for them. But with all the mix of flavors popping around, I was concerned their one year old wouldn't be a fan. Now, my cousin and her husband loved it, and for a bit, the kiddo seemed to enjoy what his mom was sharing.
    And then, the moment my cousin turned her head, he snatched a handful off her plate and ran away with it, stuffing it in his mouth.
    It was my proudest cooking moment, honestly.

    Just made it, I didn't have any chili flakes and so it didn't really taste much... I made this because I didn't have anything else in the fridge but some left over parsley and garlic but if I did this again properly I would probably add the chiliflakes and shrimps :)

    If you want to add more to this pasta even tho i find the plain recipe satisfying i'd recommend to Add lots of fresh or dried red chilis (with the seeds!) and i like to pan fry chorizo or italian sausages and leave the fat and charred bits that happen from it in the pan for when i cook my garlic and sometimes shallots as well. then chop up the sausage and add it. Also if you add roasted garlic at the end and roasted pine nuts really adds a huge flavour. Some people love the plain recipe but i find it is just a great base for more innovative pastas. But i love the plain recipe just as much sometimes when i really nail all the ratios! I also find that rosemary while cooking the garlic instead or with the parsley is more satisfying. And sardines, anchovies and capers with lemon juice added is killer in the summer with a great dry white wine! sorry to go over the top i just love this kind of pasta haha

    I'll be honest, I haven't the foggiest idea what I did wrong. I followed everything step by step and I ended up with garlic flavored olive oil soaked noodles
    No real sauce to speak of, just noodles in olive oil

      +simon manzer haha your passion and interest are pretty cool! That sounds like it would make it tasty for sure, but I was just disappointed that I didn't enjoy the basic recipe without adding anything to it. On the other hand, there are things I didn't like at one point and ended up loving, so I'm not going to give up lol

      +simon manzer I'm pretty sure the amount of pasta water I added was right because I reached a good saucy consistency and the garlic was pretty golden. My comment is about the recipe with only garlic, parsley and olive oil; and no Parmesan. When I added Parmesan (wasn't very fresh, but it was real Parmigiano Reggiano that I grated myself) I didn't dislike it, but I didn't love it.

      Try it again a few times with different ratios of pasta water and you garlic shouldn't be a light golden brown don't over or underdo it... it's pretty hard to dislike this recipe if it's done right. Also should really be adding fresh parmesan and maybe toasted pine nuts

    Hi Andrew, big fan of your channel, but I have a problem here.
    I know you are just trying to replicate a recipe seen on a movie, but just to be clear:
    That's not even close to a real aglio, olio e peperoncino.
    Not sure why everybody outside Italy thinks that in Italy we use that amount of garlic, or parsley.
    Unless you are doing some fish based pasta sauce, no lemons are ever used for pasta.
    Burned garlic is as painful as pizza with pineapple.

    This recipe was amazing and really really easy. Took me 30mins and only cost $15(I didn’t have olive oil that’s why it was expensive). I also added Parmesan cheese to it for taste and holy shit!     Every time you do an italian dish, you make unnecessary changes to it that the characters in the show don't do, belying your premise, distorting the cuisine and most importantly just not doing what the people in the show do!     Once tried this recipe because I had almost nothing left in the house, except for the ingredients to make Aglio e Olio (as it turned out as I was looking for recipes with those ingredients). It blew me away, it truly is greater than the sum of its parts.
