    Just like the double berry ice cream I shared with you a few months ago, this vegan vanilla ice cream is intensely creamy. With a deep vanilla bean aroma flavor, It has just a hint of coconut you’d only pick out if you knew you were looking for it.
    If you don’t do dairy like me, you may be looking for vegan cool treats to eat in the summer. Fortunately, grocery stores now carry a plethora of delicious non-dairy frozen desserts using various plant-based milks. But ever since I purchased my ice cream machine, I’ve been churning my own and the flavor possibilities are endless.
    The inspiration for this vegan vanilla ice cream came from Luna & Larry’s Coconut Bliss. The texture and flavor of Coconut Bliss is largely indistinguishable from premium ice cream. It’s smooth, creamy, decadent, and so satisfying.

    I can’t have cashews so I will be using macadamia nuts if I do use macadamia nuts do I still have to soak them and if so for how long

    Hi! Thanks for all the beautiful vegan ice cream recipes! Did you know you can make it fat free too by omitting the coconut milk and using fat free milk mixed with gelatin dissolved in water instead? This way you get a full fat taste without the fat! Later!

    It looks good but I'm left with the question if cashews can be considered part of raw vegan diet, whenever I see raw foodists use this item, as I saw it being mentionned in a raw vegan group about thé heat to get it out shell.

    Hi there!!
    I think I am going to try and make this as it looks fantastic... Also for the fact it is made of simple, fewer and way healthier ingredients!
    But I have a question : what variations would I need to make if I used this base recipe but wanted to turn it into either pistachio ice cream or just dark chocolate ice cream?!

      You would need to put the mixture in the freezer and mix every 30 mins for 2 hours and let it set for 4 hours after

    Don't you guys get sick of everything tasting of coconut and banana. I don't care for either flavor at all and that's all people seem to use for sweets

      You can use dates, cane sugar, corn syrup or maple syrup if bored. I personally don't like banana sweetness too much generally so I see where you coming from. As for coconut, I like it but there are ways to hide thé coconut flavour with a variety of ingrédients if you don't.

      Coconut has enough fat to mimic dairy products and bananas hold their shape while being naturally sweet so sugar is not needed.

    Cashews are too expensive! Cut up a banana, freeze it, then blend it in a Vitamix, add whatever flavor, fruit, even peanut butter!

    Dear Petra, I made the temperd dark chocolate and it was OF COURSE wonderful!
    Actually it wasn't my first time to make this kind of chocolate but your recipe is accurate and fully-featured !
    I made it with nuts like you and the taste was mmmmmm - difficult to discribe! Amazing!!
    I also made the white chocolate from your book with recipes but instead of xylitol I added honey so the result was good but think I'm more admirer of dark chocolate :))

    Hello Petra finally I have had a moment to myself and decided to make your yummy sounding ice tasted great sweet and flavorful but the coconut creme made clumps in the ice creme maker by the time it was can I avoid that next time..seems I am the only one who has had that issue...thanks for sharing..

      I also had clumps and after ice cream maker it was creamy but once I put it in the freezer it became icy and you can actually see the coconut oil tiny balls

      I've tried this exact same recipe a couple of years ago, but I used coconuts instead of canned cream and honey instead of maple syrup (so, it was not totally vegan). Break the coconut, get the meat out. Cut all the coconut meat into small pieces. Add water to it. For an average size coconut, I use one cup of water or one cup and a half. Blend it in a food processor and then transfer it in a nut milk bag. Squeeze well the bag, like really squeeze it. Use that liquid that comes out, instead of the can. Instead of vanilla, you can add 2 cups of strawberries cut into small pieces or mango or any other fruit that you like. I've tried it many times and it's really good... and all natural, none of the preservatives or additives that might be in the canned stuff.
