Binging with Babish: Grilled Cheese Deluxe from Regular Show

  • This week, for the first time ever, we're double-dipping into the same source material two episodes in a row. Why? Last week was National Grilled Cheese Day, and well damn it, it got me in the mood. So while we don't have any accurate stats or specs on the 'grilled cheese deluxe' from Cheezer's, this is my very best effort to make a grilled cheese worth standing in line for. Unless you're an astronaut, of course.

    Dude, you went to all this trouble and skipped Muenster? Muenster is the reason I'm probably not going to bother making my own processed cheese again when I want to be super extra with burgers. Kind of annoying to slice, but the melt is perfect and the flavor is like if store-bought American cheese decided to give a shit today.

    my favorite thing to put on a grilled cheese is blackberry jam. it sounds crazy, but it works SO well. i've also (separately) tried grilled cheese with monterey jack, vermont extra sharp cheddar, and pepper jack, which was a god-tier combo in my opinion

    Pro Tip: Replace the gleatin with sodium citrate. It will emulsify the fats properly, wheras the gelatin is just making it set solid.

    My favorite way to make grilled cheese: two slices of sourdough bread, spread mayonnaise on the insides and butter on the outside, two thin slices of marble cheddar is the cheese of choice. Fry in pan on both sides until golden brown. Pickle on the side with a glass of milk. One of my favorite foods ever, one of the things I crave the most, and luckily REALLY fast and easy to make. Too bad I don't have any bread right now... u_u
