@Niall Tracey From what I understand during the pickling process the acid in the solution replaces the water in the product through osmosis, lowering the pH of it and making it more shelf stable over time.
The difference between pickling with a vinegar solution and with a salt brine promoting the growth of lactobacillus is that the vinegar solution already contains the acids that replace the water in the product and does not require fermentation while the salt brine requires the bacteria to create the acids first.
I may be wrong but the only acidophilic bacteria that would be useful is the one that creates acetic acid (vinegar) which if you are using a vinegar solution is not necessary to create more vinegar and I am not sure any of that bacteria is present in the products you are trying to pickle or in the vinegar itself. If there was a secondary fermentation there should be pressure building up from the gasses being created, I have not noticed that when pickling with a vinegar solution during the times I have pickled things with that method.

That's amazing can you essentially do the same with a pressure cooker?? That would be great or if they made a kitchen cooking machine that had this vacuum chamber feature that would be nice too. You could make all kinds of pickles super fast š maybe even kimchi in just a few minutes š¤¤š

Technically correct, but many pickles have a level of fermentation going on too that breaks down enzymes etc.

The main problem is the vacuum chamber.
If you could get a vacuum chamber sufficient to cause this set up to not use a compressor, but be basically a space in a piston chamber hooked up to a giant flywheel or something, you could set up something with an absolutely absurd throughput rate turning cucumbers in brined vinegar into refrigerator pickles about as fast as you could get them in the jars and close said jars.
Set up the entire thing and you could be shipping out pickles the day the cucumbers for them came in.
Alternatively, if you could miniaturize that kind of setup (also avoiding a compressor because those are _loud)_ using another flywheel or a capacitor bank or something and have it be reliable and easy and cheap to maintain, you could sell it to sandwich shops to have their own pickles made fresh to order for every sandwich.
Could legit be making the pickles while it was being toasted/in a panini press with a pickling brine unique to the shop (or even sandwich).
If anyoneone has the know-how to make a vacuum chamber that can run without a compressor and fit into the workings of either a bottling plant or sandwich shop THAT is how you make money off this idea.

You can also make pickles with them fancy cool whip dispensers you see at some restaurants. Just toss your cut cucumbers in with the seasonings and brine then add CO²

You can make a nice easy pickle by slicing the cucumber then adding it to a malt vinegar/sugar mix for about 4-6 hours, you can also add slices white onions.

Stand them vertically then apply vacuum, release brine solution from bottom filling to top .When equalized apply vacuum a second time and watch bubbles appear and not allowing brine solution to enter hold for a short time.After a few minutes slowly release and watch how much more liquid is absorbed .

We usually prepare pickles out of raw mango,garlic and lemon etc, that comes with the red liquid which is salty,sweet, spicy at the same time.
And it tastes really good.
And especially the pickles prepared by my grandma are the best!!

yeah, pickling is practically doing the same thing as this, it's just a slower process and makes use of bacteria instead of artificial vacuuming
Almost all pickle companies and hone picklers do this process, they probably just don't realize it. In canning, once the food is placed in jars they are sealed then heated in a water bath or placed in a pressure cooker. This causes the air inside of the jars to expell out the lids and upon cooling a vacuum is formed inside of the jar. That is why you get a pop when you first open a pickle jar and why there is a pressure tab on the lid.

Okay. Now I can't help but wonder if you ever tried using your chamber to assist in any molecular gastronomy related experimentation.
I think of how low the pressure is in a crock pot, and how a consumer sous vide is usually just something to regulate the temperature to a very finite degree, when sous vide actually means "under vacuum", and therefore I believe that the traditional sous vide cooking must be under some sort of additional pressure when compared to a standard crock pot that you would hook a sous vide node into. So, just spitballing, but there should probably be a hundred or more other simple, intuitive applications that wouldn't require an insane amount of culinary background to make happen.

As a chem teacher. What topic would be taught here? Diffusion vapor pressure? It's a great trick but almost every youtube video didn't really teach chemistry, it excites curiosity. It help kids say "that's cool now lets learn more in class".
@Mochi we were allowed to do pretty much whatever we wanted in high school though, up until then the schools wouldnāt really let you do anything, but the second you hit high school itās just āwell for chemistry today we are gonna learn how to make ice creamā n my other teacher would let her dog pull me around on my skateboard around school, yet my psychology teacher had to take abreak from school (assuming it was a suspension) because he decided to teach everything his class was supposed to about rather than what is āokayā one of the best teachers Iāve ever had, Mr. Jenkins is a beast.
@Mochi well we once in school made salmiak (ammonium cloride) (salty powder used in candy) no idea what the english word is. In school which is literally made with made with 2 highly dangerous chemicals hydrochloric acid and ammonia. And ate it.

You might have accelerated the osmosis phenomena by doing so, but to have a ''perfect'' pickle you'll need to add some lactobacilli bacteria to develop all the flavour of pickles, not just the acidity

Used to see TV ads for a vacuum marinating chamber. It wasn't a good vacuum as it was achieved with a hand pump but you could put it on this spinning base to keep it tumbling to keep everything covered in the marinade.
Really curious if you could speed marinate some meats and test it with other methods, maybe make this a food channel idk š¶
