Easy Peanut Brittle

  • No need for a candy thermometer for this peanut brittle. This is a very quick and easy recipe that I got from my Step-Dad. Just be very careful because you are working with very hot sugar. Here are the ingredients and directions:
    2 cups granulated sugar
    1/2 cup water
    1 1/2 cups peanuts
    If you are using salted peanuts, no need to add any more salt. If using unsalted, you can add a pinch of salt to your sugar and water, or sprinkle some salt over the top of your brittle. You can leave out the salt. It's up to you.
    Go ahead and prep your baking sheet with a silicone mat, or non stick cooking spray, or butter.
    In a large pan over medium high heat, add your sugar and water. Gently stir until the sugar melts. Once melted and it starts to boil, stir occasionally until the sugar turns a light amber color. Be careful because the sugar can burn fast. Once the sugar turns to a golden amber color, remove from heat and carefully stir in your peanuts and pour on your prepared baking sheet. Be careful because this is very hot! Let this completely cool before breaking the brittle up. Store in an air tight container. I hope you enjoy!
