Dry Aged Tuna Sushi ($4,000!!)

  • Bluefin tuna is a staple in the world of sushi. Perfectly balanced and melt in your mouth, a fresh piece of Bluefin is hard to beat. Then, there’s dry aged tuna… which is in a world of its own.

    The most significant improvement was texture. Bluefin tuna (especially the lean “Akami”) can sometimes be chewy. I was shocked to find that even pieces with many white fibers, disintegrated the moment they touched my mouth.

    Flavor came next. With dry aged beef, we expect “nutty” or even “blue cheesy” notes. This was different. Instead of a flavor change, it was more of a flavor enhancement. As I mention in the video, it tasted like tuna in its truest form.

    I want to give a huge thank you to Liwei (dry_aged_fish_guy on IG) . His guidance through this process is the only reason I was able to make it happen. He has a saying: “Fresh is boring”. It took 4 weeks of work for me to finally understand what that means.

      @WiseMonkey I think it's because of the scarcity of Tuna. The fish almost went extinct because of overfishing.

    Caught about 100 lbs of bluefin off the cali coast once, made amazing sushi and seared steaks, would definitely recommend charter fishing for anyone who hasn’t

    One of the best ways to eat ahi tuna (AKA Katsuo in Japan) is sear cook. The taste of Katsuo is very different from real tuna (yellow fin or bluefin or mebachi) and isn't even close to the king of sushi..

      Fish smells like ocean when it’s fresh out the water like when u left ur clothes in the washing machine and they smell like water but u air dry and they no longer smell like water. It’s initially the same process.

      As a Japanese with a sushi chef dad I'm triggered because Ahi tuna (Katsuo) and what you would call 'Maguro' (Bluefin, yellowfin, or bigeye tuna) taste absolutely different.
      While Katso is still pretty good as sushi, it's famously known for katso-bushi (or typically just known as dashi over in the states) which is Ahi tuna completely dried out, shaven and powdered or boiled concentrated.
      Since typically the taste of ahi tuna is too strong, the most popular ahi tuna sushi is Katso-no-Tataki where the surface of the sushi block (saku) is seared and served as sashimi with ginger and green onions to cut the taste.
      Real 'maguro', at least in my opinion, doesn't even compare in taste although Tataki is also one of my favorite sushis.

      @ᄂDEADSOONᄀ Though as a caveat, some of the more harmful strains of bacteria that can be found in fish/other meats, only goes inactive during processes like these, not outright killed. So there is always the chance you can get ill, but it's unlikely.

      The lack of heat and moisture basically erradicate bacteria which is what causes flesh and meat to decay.

      No expert, but I believe it’s because of the “dry” aging aspect, rather than just aging. You have to have a set up or one of those special refrigerator bags that only lets moisture out, not in. The outside dries out and hardens and protects the middle from bacteria that would make it rot

      @Sriya V Our. Not just yours. It's because it was not processed as meat is being processed as it is now in more modern times. We took the animal out back and slaughtered it. Now it's being done professionally in a clean environment. Just like I remember helping my mom/grandma clean our rice from little stones etc, the rice we buy now is already clean and only needs to be rinsed for the starch.

      Yeah, Toro is really good stuff. I’ve never had Otoro, which I’ve heard is the best, but Chutoro is an amazing experience if you’re into sushi. Tastes more buttery than fishy and it’s super tender so it stays together when you pick it up but falls apart easily in your mouth. It’s expensive though; I got two pieces of Nigiri for $25 and the Otoro was so expensive it was just listed as “Market Price”

      @Uzumaki Boruto tuna is one of the single types of meat to that you can eat raw. It s pretty soft and easy to chew and it doesn't have parasites that could affect a human(btw sry for my English)
