Korean Chicken Noodle Soup from Scratch (Kalguksu: 칼국수)

  • Published on Mar 29, 2014
  • The written recipe with photos and tips is here:
I'm sharing my family's all-time favorite food with you today, chicken noodle soup -- dak-kalguksu in Korean. The word kal means knife and guksu means noodle soup, indicating that the noodles in this soup are made by cutting them from the dough.
There are many kinds of kalguksu, but this version is made with chicken (dak in Korean). The noodles are made from scratch, which makes this dish very special and welcome in any home.

Mangachi is such an inspiration for me. I'm Indonesian and i get married with Korean man and now we live in Indonesia because of my husband's work. First at all i had so many difficulties living with him especially i really dont know how to cook korean foods and then my mom in law trained me all the time. While doing my training time i also visit so many restaurants and watch your cooking video. So finally i got my rythm on cooking. After 5 years keeping my effort to do korean cooking, i feel like cooking is an 'Art'. It makes my husband happy whenever after he reaches at home from work, he finds out his hometown food serves on the table and he definetley feels really happy. Now i'm a mother of 2 and i share my experience and journey to cook and to teach childrens to all of the new moms. Thank you mangachi. Wish me luck

Thank you Maangchi for this recipe. My grandmother passed away on Monday -- I used to help her make kalguksu when I was little, so I decided to make kalguksu by myself to remember her by. I used your recipe and it was delicious -- thank you for helping me remember by grandmother.

Maangchi I did this soup for dinner today, but instead of zucchini I used eggplant and bell pepper, I didn't have the zucchini. It was so delicious, even my kids loved and ate the veggies. Home made noodles are something!!! Thanks for the recipe. I have never used sesame oil before, but to be honest the flavour of this oil is so good. I'll use it in every cooking from now on. Thanks again

Maangchi! I am a Canadian student with Zoom classes at home. I learned how to make dumpling dough during quarantine, loved it. My favourite meal is noodles, but I always thought that territory was too difficult for me to try. You've showed me otherwise! So excited to eat handmade noodles now.
