    🇺🇸RED BOUDIN SAUSAGE: Load the massive cooking pot with cut up pork and water. Cook overnight. Debone and grind the pork. Season the pork to taste and cook. Add rice and pigs blood to the mixture. Stuff mixture into the sausage casing and then link the sausages. Poach to cook the blood.

    🇺🇸 CRACKLINS: Fry pork skin and fat into small pieces.
    🇺🇸 FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.

    Crawfish Boudin? OMG, OMG!

    Wow, that sounds amazing.

    I'm a Brit that lives in the South of England, so the French terminology is not unfamiliar to me as France is quite close (the words 'boudin' and 'pudding' are related (say them fast {pronounce it 'boodan' like the French} and they sound the same) - and our 'Black Pudding' (blood sausage) is another version of the French 'Boudin Noire' - but better - sorry France....).

    What REALLY excites me is the idea of 'crawfish' boudin. Thanks to some idiots here in Europe back in the 1970s who imported them, we have an invasive species of American crayfish/crawfish that have no natural enemies (apart from the other invasive species, American mink). These crustaceans are pretty much out of control as pretty much nothing eats them). Consequently, I can catch the wee bastards in abundance from the river at the bottom of my garden. I will be trying crawfish boudin.....

      But it ISN'T... it is sold every day in tens of thousands of supermarkets, restaurants and convenience stores continuously in at least seven states... it is so widely made that there is actually a SHORTAGE of pork livers in the region, with most of them being pre-purchased by boudin factories before the hogs are even butchered.

    The Bible prohibits the eating of blood. One of only a few food requirements carried over from the Old Testament.
    My grandmother use to make blood sausage. Old time farmers didn't waste any part of the animal. Thank you for an amazing video.

    That blood sausage . We call it black pudding. My mother used a funnel and stuffed it down then boiled it. Of course it was mixed with some special herbs and spices. Delicious.
