It's just about as easy as opening one of those little boxes of shells and powdered sauce-and a whole lot more delicious. Our super-quick stovetop mac and cheese borrows from the method for a classic cacio e pepe pasta, but with a bit of milk to make it extra creamy. No béchamel, no baking, just pure dairy-on-carbs joy.

    The salt is "left behind in the water" but you use the water when you make the sauce. Whenever I try to follow your pasta recipes, my pasta turns out saltier than the Black Sea. You've ruined too many pastas and now I just ignore your salt suggestions.

    Seriously.... Why bother????
    There's nothing "adult" about this
    at all!!!! Use heavy cream ,gruyere ,
    cheddar , American ...a nice mix of
    cheeses and then add adult ingredients
    Like caramelized onions an lobster or shrimp
    THEN it's adult Mac & CH. !!!!!

    I was skeptical but I made this last night and it is amazing. The only thing I did differently is I used half and half and I probably used a touch less pepper and I didn't measure anything but thats just me. I've made several versions of mac and cheese and this is now one of my family's favorites. Give it a try before judging it.

    Looks great, but definitely a 2 pot pasta. Most pasta preparations I know of use 2 pots (one to cook the pasta, one to prepare the sauce), so I’m not seeing what is unique about this preparation.

    could you guys maybe include like metric measurements ? i have no idea how much stick of butter would be... 100 g ? 80 g ? 50 g ? 8 tablespoons doesn't really help me either :D and for the most part i really do like you recipes so its frustrating not being able to cook them for us at home as well ;)

    Made this - 1. Even with half the pepper it was too much. 2. Way too salty. I will try again with my own salt and pepper ratios as well as maybe 2 parts parm 1 part Mozzarella

    I made this right after seeing this video and it was not good. Waaaay too much salt, and I am normally a salt enthusiast! We actually had to throw it away because it was like eating salt water.

    I hate to be that guy but...
    Molly is excessively pretty.
    Anyway. More importantly, though, I made this mac n cheese. Normally, I much prefer a bechamel base but, this recipe was straight flames.
    Also, being lactose intolerant, my life wasn't miserable after enjoying my meal.

    Pasta cooking water is liquid gold..? Honestly I'd rather put in some whole milk instead of water. Something that has flavor and won't just dilute everything. Also the end result looked, as suspected, watery. It's basically butter & water with some cheese. Not impressed.

      Italians use the pasta water. The starch from the water allows the sauce to adhere better to the pasta.

    Bechamel is not difficult, and will result in a better sauce. Flour + Butter, stir and cook until it smells nice and starts to brown (bechamel is done), add milk, reduce (until sauce easily coats stirring spoon), melt in cheese, done.

    Do y’all think this would bake well?? I think I’ll try it anyways because I feel like it might be more stable than a béchamel (or atleast for me because the last few times I baked it too long and at too high a temp so it broke but I’ll probably just broil the top... hm..) but I will update if it’s not a mess.. the people are coming over tonight intuition don’t fail me now...
